Wonderful chanterelle toast. Mushroom toast is a wonderfully tasty and easy way to take advantage of the raw materials found in our nature.
4 slices of sourdough bread
1 liter of yellow chanterelles
8 slices of Västerbottensost cheese®
Butter for frying
Parsley to serve
Grated Västerbottensost® to serve
Chanterelle toast with Västerbottensost®
Start by clearing and polishing the chanterelles.
Fry them in a pan without butter first so that most of the liquid that the mushrooms emit evaporates.
Add a large dollop of butter to the pan and fry until the chanterelles get nice color.
Season to taste with salt and pepper.
Put a few slices of Västerbotten cheese® on the bread and top with the chanterelles.
Decorate with parsley and bake in the oven 5-10 minutes until the cheese is melted and the toast is nicely browned.
Sprinkle with some grated Västerbotten cheese® and serve!
