1 pkt fresh puff pastry
2–3 dl Västerbottensost®, grated
2 tablespoons chives, finely cut
1 egg yolk
2 tablespoons dill, chopped
1⁄2 tsp flake salt
1⁄2 lemon
1 dl crème fraiche
125 g of crayfish tails
1⁄2 bunches of dill
Salt and pepper
Pie dough: Roll out the puff pastry flat in a parchment-lined roasting pan.
Spread grated Västerbotten cheese, chopped dill, chives and flake salt evenly over the dough plate.
Roll up the puff pastry from the short side and brush the joint with a beaten yolk.
Cut the roll into slices about 1 cm thick.
Bake the spins in the middle of the oven for about 15 minutes.
Take out and let cool.
Topping: Stir together the créme fraiche and grated zest from 1⁄2 lemon, season with salt and black pepper.
Click out on the spins and top with some crayfish tails and dill just before serving.
