Grater of a lemon
500 g of milk
1 vanilla bean
240 g of egg yolk
250 g granulated sugar
50 g of trimoline
500 g Västerbottensost cheese
250 g crème fraiche
Lemon juice
Salt
Black pepper, freshly ground
Bring lemon grater, milk and vanilla bean to a boil. Whisk together egg yolk, sugar and trimolin. Pour the batter into the milk mixture and heat to 85 degrees. Add cheese, crème fraiche, lemon juice, salt and black pepper. Freeze in ice cream maker.
