Rum stir-fry is a wonderfully tasty accompaniment and goes great with Västerbotten cheese pie®, fish or shrimp.
1 fennel or 1/2 cucumber
juice of 1 lime
1 cup roe
1 dl crème fraiche
1/2 pinch black pepper
1 tablespoon finely chopped dill
Salt and black pepper
Split the fennel in half and cut off the root.
Shred the fennel very thinly and mix with the lime juice.
Add roe, crème fraiche and dill.
Season to taste with salt and freshly ground black pepper.
