A pesto made from artichoke and Västerbotten cheese®. Goes just as well with pasta as with grilled!
420 g of canned artichoke hearts
1 clove of garlic
40 g of pine nuts
2 tablespoons olive oil
1 tsp lemon juice
1 tsp finely grated lemon zest
100 g Västerbottensost®, finely grated
Salt and black pepper
Pesto on artichoke and Västerbottensost cheese®
Mix artichoke hearts with garlic and pine nuts. Drip in olive oil. Turn in lemon juice, lemon zest and finely grated Västerbotten cheese. Season to taste with salt
and pepper. Serve on a good bread or as a side dish to a delicious fish or meat dish.
